2. Red Velvet Something

When was red velvet invented? Because it seems like it’s just recently become popular. Recently, as in for the past couple-something years. At first, they were red velvet cupcakes. Then it was turned into an actual cake. And recently I’ve been seeing red velvet pancakes, as seen here : http://foodporndaily.com/pictures/red-velvet-pancakes-with-blueberries-whipped-cream-and-syrup/.

That’s one of my favorite websites. Anyway, cupcakes are one of my favorite things to make. And I’ve never made a cake before. Cakes are iffy for me because I don’t think my family eats enough to be able to finish it. So when I decided I wanted to make something that was red velvet flavored, I knew I wanted to make something unique that wouldn’t be too overpowering.

Red Velvet Pancakes

Flour 1 cup

Unsweetened Cocoa Powder 2 tbsp

Sugar 3 tbsp

Baking powder 1.5 tsp

Baking soda 0.5 tsp

Ground cinnamon 1 tsp

Kosher salt 1 tsp

Buttermilk 1.25 cups

2 large eggs

Vanilla Extract 1 tsp

Red Food Coloring 1 tbsp

Melted butter 2 oz (half stick)

Sooo….

Dry. Flour, Cocoa, Sugar, Baking soda & powder, cinnamon, salt.
Wet!

This is a pancake batter, so it won’t be as thick as cake batter. It also won’t be as sweet. ;]

Everyone knows how to make pancakes! That's butter in the pan... browned butter... so?

Now, to go over the red velvet pancakes is a cream cheese-y thing. Just like the cream cheese frosting that goes over a red velvet cupcake or the icing of a red velvet cake. So I used the recipe from the website too. Except, I didn’t. Well, I wanted to, but I didn’t have some of the ingredients. So I improvised. You probably should try the whipped cream cheese the website calls for. But this is what I did with what I had:

Cream Cheese-y Thing

Softened Cream Cheese 5 oz

Milk 1/4 cup

Sugar 3 tbsp

Vanilla 1 tsp

Then you put it all together.

Success! They were very good. Not very sweet, but red velvet isn’t supposed to be that sweet to begin with. The cream cheese was really good. And blueberries… blueberries are delicious with these even though they weren’t part of the recipe! Tastes good even when you eat them at 7 at night. 🙂
