11. Orange Cake

Another healthy recipe that my sister (Nikiya) found from one of her healthy recipe websites. So yes, this means that the recipe will be kept a secret from you once again, and I will have to try my best to remember what we put inside this cake. The good news is we used up some oranges (or was it just one orange?) from our fridge. You have to see our fridge to understand how many oranges we have in our house. Actually, we have some on the counter too because they can’t all fit in the fridge.

My mother likes buying oranges.

Let’s begin.

First, gather the wet ingredients. What I believe to be eggs (you’ll need 3 in total even though the picture only shows 2. THREE), 3 tablespoons of plain yogurt, orange zest from 1 orange (I think), brown and white sugars, vanilla, and oil.

Wet ingredients.

Then add the dry ingredients to the wet. That’s what I believe to be flour and baking powder(?). Okay this isn’t helping. Anyway, also salt.

Dry ingredients.
Add the juice of one orange (the one you zested).
In a greased and floured bundt pan. In a 375 degree oven for 30 mins (or more, depends on the oven).
All done! Yeah, I kind of floured the pan a bit too much.

So this cake really wasn’t that sweet. Probably because it’s healthy and my sister put less than a cup of sugar in it. Also, it definitely needed more orange flavor. I mean, you can smell the orange but you really couldn’t taste it. It tasted kind of like a plain pound cake, so it wasn’t bad. But the next time we make this, we’ll add way more orange flavor. (more orange zest) Maybe from 3 oranges next time?

  1. i was thinking more like 5 oranges next time 😛 it’s an ORANGE cake. there’s no way we can go overboard with the orange flavor. plus… more orange = more sweetness achieved without adding more sugar! but also, add choco chips next time??? it will add another dimension to the cake! also… you need to make sure it doesn’t stick to the pan next time. we scratched my pan 😦 okay i’m gonna go see if i can make some dinner now. i’m not promising anything.
